Shochu (Show - Chew) is an distilled spirit discovered in Persia around 1200 AD. It was improved in Japan about 400 years ago and perfected in North Carolina in 2018! Brush Creek Beverage was founded with the idea of introducing the American adult beverage market to this relatively unknown ancient and tasty alcohol. Shochu utilizes a special fungus for fermentation that changes the starches to sugars. 502 is our spin on this unique spirit. We produce this small batch, hand crafted alcohol from local and regional ingredients using rice, raw cane sugar, and North Carolina sweet potatoes. We only use natural spring water for both distillation and bottling.
Shochu has traditionally not been produced in the United States but is becoming popular for the distinct Umami flavors. Mixologists and bar-tenders are discovering Shochu and it has made its way into a Forbes Article. We appreciate the spotlight, but disagree that it should be of lower proof. In fact, we bottle our 502 at 80 proof and our Oak Rested at 100.4 proof.
502 is an Original American Recipe. Introduced to Japanese Imo (sweet potato) Shochu in the early 2000's, Brush Creek Beverage began research and experimentation to create an American version of this Koji based alcohol that would be versatile and appealing to Vodka and Whiskey lovers alike. The result is a smooth sipper - straight up or on-the-rocks. Refreshing and delicious with sweet green tea or flavored seltzers. It makes an outstanding base for some favorite Whiskey and Vodka cocktails. Manhattans and Sours are especially tasty with our new Oak Rested 100.4 proof version. The original 502 makes umami bursting Martinis, Bloody Marys and Cosmopolitans.
